Vendor Spotlight: Gemma Foods

Chef Tony Quartaro’s culinary journey began at age 8, making meatballs and gnocchi at home with his Italian grandmother. Working in award-winning restaurants in San Francisco, NYC, and Chicago, which included a Jean Banchet win for Tony in 2015, he created his vision for Gemma Foods and his desire to bring restaurant-quality Italian food to the family dinner table. Gemma Foods opened its first shop on Grand Ave in 2022. Now shipping fresh pasta and sauces nationwide, Gemma Foods has expanded and grown after adding classes, catering, wholesale, and a full year of service at TimeOut Market Chicago. With quality craftsmanship and exceptional ingredients at the forefront, Gemma Foods is proud to continue its mission to bring pasta to the people at Revival Food Hall.

Guests can enjoy their curated menu of small plates, sandwiches, and of course, fresh pasta, Monday through Friday at the hall. Some of our favorite dishes include their Squash Blossoms, made with il casolare smoked bufala, calabrian chile, lemon, and basil, and Ricotta Gnocchi with Basil Pesto! Buffalo Dosa Wrap from Art of Dosa

Art of Dosa is a fast-casual concept from owner and founder Ravi Nagubadi that celebrates the South Indian delicacy Masala Dosa with its wonderfully one-of-a-kind menu. Their Buffalo Dosa Wrap speaks perfectly to their desire to balance traditional and new flavors as it features a crispy dosa filled with marinated vegan “Buffalo” soy protein, fresh shredded cabbage and carrots, a delicious vegan curry leaf green mayo sauce, and is served with extra sauce and a green “gunpowder” spice blend. If you’re not a vegetarian, you may be convinced to switch after trying this beautifully delicious meatless meal.

Grilled Cheese & Tomato Bisque from Fat Shallot

Sometimes the basics are all you need. Cue one of our favorite food combos, grilled cheese and tomato soup from Revival-favorite The Fat Shallot. Their gourmet take on your favorite childhood staple is made with sauteed spinach, caramelized onions, and melty muenster cheese between two slices of fresh sourdough. Add a cup of warming Tomato Bisque to the mix, and this meal will transport your tastebuds back to the carefree days of the past in a delicious way.


Poke Bowl from Aloha Poke

Aloha Poke is on a mission to rethink fast food for the future by providing delicious, beautifully healthy meals to fuel your day-to-day. Their fresh-packed and tasty bowls filled with sushi-grade fish and Hawaiian-inspired raw ingredients are the perfect meal when adhering to Lent practices and abstaining from meat on Fridays. Choose from their tried and true combos like the Aloha Bowl, made with pineapple, cucumber, scallions, jalapeno, Maui onion, and a sesame vinaigrette sauce, or build your own creation!

Seasonal Veggie Bowl from FARE

Just because you’re opting out of meat does not mean you have to opt out of delicious flavor. Revival’s newest vendor, FARE, offers seasonal, healthful, and satisfying bowls that are rich in plants, environmentally sustainable, and so d*mn tasty. If you’re cutting back (or cutting out) the meats, try their Seasonal Veggie Bowl, a phenomenal assortment of miso carrots, balsamic roasted mushrooms, curry chickpeas, and creamy tahini. You can thank us for the recommendation later.

Vegan Sausage Slice from Dimo’s Cafe

Leave it up to Dimo Cafe to figure out how to translate their delectable pizza offerings into the perfect vegan slice. While it’s hard (near impossible) to choose a favorite, their Vegan Sausage Slice has grabbed our hearts. Featuring San Marzano Marinara, vegan mozzarella, and housemade vegan sausage, this meatless and dairy-free version of a classic slice hits the spot like nothing else when we’re craving some ‘za on meat-free days.

Spinach & Cheese Emapanada from Lito’s Empanadas

When we think of a grab-and-go lunch, we think of these Latin American-style turnovers from Lito’s Empanadas. Flavor-packed fillings encased in perfectly crispy dough make these handhelds the optimal lunch when you need to keep things moving. Fans may be more familiar with their Chicken, Beef, and Al Pastor varieties, but you do not want to miss their Spinach & Cheese flavor featuring mozzarella, fresh spinach, and onions. Pair with their iconic Sweet Sauce for a slightly sweet, mostly savory, and very cheesy combination.

Veracruz Style Fish Taco

Dos Taqueria is already our go-to for mouthwatering lunch specials, and this limited-time Mahi Mahi taco is no exception. This fresh fish dish handheld features seasoned Mahi Mahi served over Mexican rice on a soft corn tortilla with a Veracruz-style tomato sauce and finished with pickled onions, jalapeno, golden raisins, and fried capers. Try it for yourself this lenten season before it’s gone!

Breakfast Sandwich from Familiar Bakery

We all know, love, and can’t get enough of Familiar Bakery’s inventive pastries, fluffy donuts, and fresh sourdough bagels, but not many people realize they also offer savory breakfast sandwiches daily. Grab one of these tasty breakfast staples made with Slagel egg custard, sharp cheddar, and chili basil aioli piled high in between a milk bread roll. Pro tip: Add candied Neuske’s bacon for only $3! 


Enchilada Lunch Plate from Dos Taqueria

Brian and his wife, Jennifer, the creative force behind the Logan Square icon, Dos Urban Cantina, took their culinary talents downtown with the opening of Dos Taqueria at Revival Food Hall. This delicious eatery dishes out flavorful handhelds and exclusive specials, like their underrated Enchilada Lunch Plate featuring 2 enchiladas filled with black beans and your protein of choice and finished with guajillo sauce, cotija cheese, crema, and a side of Mexican rice for only $14. This is the filling lunch your tastebuds crave and your body deserves.


The White Pie from Dimo’s Cafe

Dimo’s Pizza is serving up the slices of our dreams with their new cafe at Revival Food Hall. Enjoy a vast selection of unique flavor combinations your inner child can only dream of, like their Mac pizza made with creme fraiche, macaroni, house cheese blend, parmesan, and green onions, or the Chicken & Waffles slice made with creme fraiche, fried chicken, mozzarella, housemade waffles, butter, and orange habanero honey. If we had to pick our favorite, though, it would have to be The White Pie, made with the same creme fraiche base, whipped ricotta, fresh mozzarella, housemade garlic puree, basil, parmesan, and olive oil. Available by the slice or by the whole pie!

Speculoos Cookie Latte from the Revival Cafe

As most know, nothing beats a quality coffee from the Revival Cafe in the morning. Give your basic drink an instant upgrade with their Speculoos Cookie Latte, a mix of their delicious Ginger Spiced Brown Sugar Syrup with some locally roasted espresso and your choice of milk, and suddenly the mornings seem even better. You’ll get a ‘lil pep in your step. You’ll stop lashing out at your coworkers. Life will be good again. Stop by for this life-changing beverage.

Secret Sandwich from Danke

As the name suggests, this sandwich from Danke is so good we’ve been trying to keep it a secret from y’all. Luckily, we’re here to pull back the curtain and tell you the Secret Sandwich tastes even better than it sounds. Featuring duck liver mousse, sliced pork belly, swiss cheese, arugula, smoked pickled onion, and whole grain mustard on a house baguette, there is nothing else like it in the downtown area. Pair with Danke’s Marinated Kale Salad to add something fresh and light to your meal.

To know Bianca’s Burgers is to love them. Their mouthwatering Memory Lane burger has been creating waves throughout the city for years (seen here in TimeOut and Chicago Magazine), and crunchy onion rings are a fan-favorite, so it just makes sense they would take their talents to the breakfast menu. Stop by on your way into the office for a Breakfast Sausage Wrap made with breakfast sausage, two scrambled eggs, cheddar cheese, lettuce, tomato, and onion. More of a bacon person? Try their Bacon, Egg, & Chees Wrap with your morning coffee for the perfect AM pairing.
